The journey began in 1824, when Dr. Siegert, having served as the Surgeon General in Simon Bolivar’s army during the Venezuelan War of Independence, set out to create a remedy for the soldiers’ ailments.

The Origins of Angostura Bitters

Motivated by a dedication to enhancing the health of his fellow countrymen, Dr. Siegert crafted a medicinal potion that would eventually earn the moniker “Aromatic Bitters.” Originally formulated to alleviate stomach and digestive ailments, this elixir swiftly garnered favor among European colonizers and traders in the Caribbean. Its composition remains shrouded in secrecy, comprising a proprietary blend of herbs and spices such as gentian, cinnamon, cloves, and citrus peel, among other undisclosed ingredients.

 

From Medicine to Mixology

The acclaim for Dr. Siegert’s creation transcended its medicinal origins as the Aromatic Bitters found a new calling in the world of cocktails. Bartenders and enthusiasts alike recognized its unique ability to enhance and elevate the flavor profile of mixed drinks. By the mid-19th century, Angostura Bitters had become a staple ingredient in bars worldwide, featuring prominently in iconic cocktails such as the Manhattan and the Old Fashioned.

In crafting the House of Applejay Old Fashion, we combine 3 parts of Bourbon and 1 part of Winter Cherry Mountain Liqueur, along with dashes of Angostura Orange, creating a uniquely flavorful cocktail.

As the demand for Angostura Bitters soared, Dr. Siegert’s sons recognized the opportunity to expand their enterprise. In 1875, they relocated the family business to Port of Spain, Trinidad, where they established a new distillery. This move marked a pivotal moment in the history of The House of Angostura, solidifying its presence on the island and laying the groundwork for the production of not only bitters but also a diverse range of exceptional spirits.
