House of Applejay Distillery Launches New Historical Series “The Spirit of Distillation” with Caroline Porsiel

East Ellijay, GA — April 6th , 2026 – House of Applejay Distillery, the Southeast’s only liqueur-first distillery, announces the launch of “The Spirit of Distillation,” a new multi-part historical series hosted by founder Caroline Porsiel in Ellijay, Georgia.

The series builds on Porsiel’s broader work in spirits history, including invited presentations for national industry organizations, and brings this perspective into a live, local setting.

This engaging series takes guests on a journey through the history of distillation — from early practices traced to ancient Mesopotamia to the refined craft of modern spirits. Each evening highlights remarkable true stories, influential figures, and key innovations that shaped distillation across the centuries.

The series begins with Part 1:
“Vapors of the Ancients: Early Innovators of Distillation & Alchemy” on Thursday, April 9 at 6:00 PM.

In the opening evening, Porsiel explores the earliest chapters — from ancient Mesopotamian techniques to figures such as Tapputi, often recognized among the earliest recorded chemists, and Mary the Jewess, whose pioneering tools laid the foundation for distillation methods still reflected in modern practice.

Each evening is presented in two short sessions with a cocktail intermission, blending historical storytelling with the relaxed, social atmosphere of the distillery.
